However, converting 2.5 gallons to 10 quarts is. 

because there are 4 quarts in a gallon, two gallons is equal to 8 quarts. You don't need another full gallon because then you'd have 12 quarts, so in order to get 10 quarts, you'd have to only use half of the final gallon, giving you 10 quarts.
