I would say that there is no other living thing on earth that can react to medical testing like animals can, for example, testing it on plants wouldn't do us any good. but if you tested it on animals and it changed their hair purple or something then you gained new information that with out testing would have been unknown.

The best reason I can think of for why we believe that air is a mixture is that freezing air slowly yields different liquids at different temperatures. Liquid nitrogen has a different boiling point than liquid oxygen. They also freeze at different temperatures. If air were only 1 compound, then air in its entirety would have a single boiling point and a single freezing point.

Enzymes are biological catalysts that help to promote biological chemical reactions in living systems.

Enzymes will have a secondary structure and when there are changes in pH this disrupts the ionic bonds in the secondary structure of the enzyme and therefore will disrupt the enzymes tertiary structure.

The disruption of bonds can cause the enzymes active site to change and therefore it can no longer efficiently carry out its task and so certain metabolic reactions will be affected.

Buffers ensure that the bodies pH remains at a constant that is comfortable and is close to the enzymes optimal pH point to ensure that all metabolic reactions occur properly.
